Thanksgiving in April
Since we're trying to use up stuff in our fridge and freezer I pulled out a seitan roast and decided to make a Thanksgiving style dinner tonight. It was a simple, throw-together meal. I tossed the roast in a roasting bag with half a sliced onion, 2 chopped potatoes with the skin on, a large handful of carrots, a pack of Lipton's "accidentally vegan" onion soup mix and a drizzle of olive oil. Jim, in his eternal quest for junk food, rode his bike up to the grocery store to get some "accidentally" (or, as I think, freakily) vegan Pillsbury crescent rolls. If they're vegan, what the hell is in those things? Dessert was a mint chocolate chip Tofutti Cutie. Mmm...
On a side note, to the person who mentioned sweet potatoes in my last entry, I made one up to take to work for lunch tomorrow. I sliced it up and then put a thin slice of pineapple between each slice and baked it, then I just tossed it in the fridge with a marichino cherry on top. I'm going to pack a little container of Ricemellow Fluff with it tomorrow. Ooh, I can't wait!

I went over to peapod to see the ingredients for crescent rolls. They weren't on line, but the reduced fat ingredients were:
Bleached Enriched Flour (Bleached Flour, Niacin, Ferrous Sulfate, Thiamin Mononitrate, Riboflavin, Folic Acid), Water, Hydrogenated Soybean Oil, Sugar, Baking Powder (Baking Soda, Sodium Acid Pyrophosphate, Sodium Aluminum Phosphate), Dextrose, Vital Wheat Gluten, Salt, Corn Starch, Datum, Potassium Chloride, Monoglycerides With BHT And Citric Acid Added To Protect Flavor, Xanthan Gum, Colored With (Artificial Color, Yellow 5, Red 40).
So much for my thinking these things were stuffed with butter.
So, what the heck is datum in the food universe? The dictionary has no idea. It seems to be an emulsifier according to the web, but no idea what it is made out of.
Jane, I often make my own seitan, but this was a roast I bought at one of our local health food stores that was lurking in our freezer.
Yikes, I looked up datum too and couldn't find a thing. I rarely let Jim buy this kind of thing, the ingredients are so gross.
Lady T, in my experience I've only experienced a slightly wheaty taste from store bought seitan, not home made, and even that is easily remedied by rising it off. I was scared to try it too. I bought a package of it and it just sat in my fridge for months. Now, though, I love it. There's a legitimate reason for the "Praise Seitan!" t-shirt! There are many good, easy recipes for it on the web. Try it in something simple first, like a soup, so it's not the focal point and if you don't like it you can fish it out. And give it more than one try. Different recipes yield different results, so you never know until you find one that you like. I use several seitan recipes from The Milennium Restaurant cookbooks and love them. Their cooking expertise comes through in their ingredient selection and portions.
Vegan with a Vengeance has one of the best homemade seitan recipes! It is fantastic!
