Cream of Asparagus Soup



Tonight we had cream of asparagus soup. I like thick soups, not skimpy ones you have to chase around a bowl with a spoon, so we tend to eat creamy, chowder-type soups. This recipe is kind of a typical recipe for me: I find a meal I want to make and I look at as many recipes for it as I can, take the things from each recipe that I like, play around with it and pray that it works out. I'm usually pretty successful. This soup had asparagus, a bit of potato and basmati rice, as well as some thyme, sage and a bay leaf, with an onion and garlic base. I love creamy soups not only because they are satisfying but also because I get to blend hot liquids in my food processor. Let's face it, that's walking on the wild side for me. :)

I realize I have the benefit of it feeling like spring here in AZ when it's only March and there's no vegetable says "spring" to me like asparagus. It's actually been a bit cool the past few days, making warm soups, sweaters and hot tea sound irresistible. I baked up a quick batch of whole wheat biscuits to have with the soup, ending another working day (*snore*) with a hearty meal.

1 yum up, 1 non-committal yum (still getting him to dig the greens, man!)

that is exactly how I make new things! research the heck out of the recipe and then make my own jumbled up kind and hope :)
