Some quick food
Just a quick little thing here.
I made the cauliflower sauce mentioned in Susan's recent post for some fetticcine. I didn't have any mushrooms, so we had broccoli and carrots. Jim HATES cauliflower, but wants to start incorporating more vegetables into this diet, so he was all for trying it this way.
The only chage I made was that I used a total of 1/4 cup of nutritional yeast, which was the max I thought Jim could tolerate, but it could have used some more. It was very yummy and I was happy that my blender was able to puree it, as I still haven't gone out and replaced my food processor yet.
For dessert, for me (another thing Jim doesn't like), some rice pudding.
I pressure cooked a cup of arborio rice in my pressure cooker with one cup of water and then tossed it in a pot with 2 cups of soy milk, a 1/4 cup o sugar, 1 tsp. cinnamon and some rum-soaked raisins. Yum! I love rice pudding, it's something I just don't make often enough.
Yesterday I woke up to a (temporary) winter wonderland.
This was the view from our bedroom window! I was so excited, but by 1pm it was all melted and now we are back to being just plain old cold, but now with patches of ice :P It was nice while it lasted. Bindhi was trying to stalk the falling clumps of snow from the trees. Silly cat! This was her first experience with snow. The boys are from MinneSNOWta, so it's old hat to them.

I saw Racheal Ray do a cauliflower sauce the other week and thought "I have to try that". I think she just cooked the $hit out of them and then mashed with a potato masher. Since I discovered homemade dal & curried veggies I have gained more of an appreciation for cauliflower, but I still don't really think to buy it at the store (quite yet).
I just can't tolerate the taste of nutritional yeast, either. I try. I want to like it. I just don't.

Awwww, Maddie is adorable. When we adopted Noble, it took about a month before Bailey and he were adjusted and civil. Hang in there! I hope you enjoy your new addition. :)

I'm a huge lover of rice pudding and in nyc am lucky enough to have a store that serves nothing but rice pudding! I've never seen a vegan option but you can see for yourself the range of flavors. maybe they will inspire you too!

Maddie is sooooo adorable! Since you can take her to work, you will have some good bonding time with her. I wish I could take Simon to work with me. :o(
My Jim doesn't like cauliflower either. If I tried this sauce, I wouldn't tell him what was in it. He's sometimes fussy. I, on the other hand, do like cauliflower.
I can't believe that the west coast is getting all this snow! I'm in Ontario, CANADA for crying out loud and all we've had is a light dusting that doesn't even cover the grass! So much for the Great White North. It's the great Green/Brown North of late.
Kudos to you for adopting an adult dog! The big ones tend to get overlooked in favor of the puppies.

Congratulations on Maddie! She looks like such a little cutie. I really look forward to hearing about the dog/cat interactions, because we have two mean old cats and we've always wanted a dog, but aren't sure that's even possible.
What's so funny is that my sister in law just adopted a puppy named Maddie (a pitbull/retriever mix).
Maddie is so cute! I so miss having a dog....

Congrats on your beautiful new friend! As long as she is gentle with the kitties, I'm sure they will adapt with time. We started out with a very anti-canine cat, and now they are all buddies. Hope you enjoy lots of snuggles together.

I had read recently about the cauliflower sauce and wondered how it was. Thanks for sharing. Now I will try it. I got a huge head of cauliflower from the farmers market. I kid you not. I should have taken a picture. My daughter said, "MOM that is huge as big as a persons head" She was right! It was only $2.50 a bargin and a half here. Usually it costs about 1.79 a pound. I love rice pudding. Wonder if you can make it with brown rice? Thanks for sharing your yumo's

This rice pudding looks downright cozy! Seems the arborio makes it extra thick and creamy.
